Unlike commercial yeast, which works quickly to make a dough rise, wild yeast works slowly and steadily. It breaks down the hardy grains over time until their nutrients are available for us to absorb, making this bread easy to digest and adding a pleasant tang that we call sourdough.
We know that good bread takes its time to rise. Each Bread SRSLY loaf rises for more than 12 hours, making it SERIOUSLY good for you.
